Coconut Macaroons

Coconut Macaroon Recipe

Prep Time 15 minutes             
Cook Time 20 minutes             Yield 15 cookies

Ingredients

 
  • 2 egg whites

  • 1 teaspoon vanilla extract

  • 2/3 cup granulated sugar

  • 2 cups shredded coconut

Directions

 

Step 1: Prepare for baking:

Preheat the oven to 325F. Cover cookie sheet with parchment paper and set aside.

Step 2: Mix ingredients together:

In a medium size mixing bowl, whisk together egg whites and vanilla extract until fluffy. Mix in sugar until fully combined. Fold in shredded coconut.

Step 3: Place macaroons on cookie sheet:

Place 1 1/2 inch balls of batter on prepared cookie sheet about 1 1/2 inch apart from each other.

Step 4: Bake macaroons:

Bake the macaroons for 20 minutes or until slight browning occurs. Let macaroons cool for about 2 minutes before placing on wire rack. Enjoy macaroons after placing on wire rack.
