Buckeyes

These no bake buckeyes are packed full of peanut butter flavor with a chocolate outside. If you love Reese's peanut butter cups than you will love these. One person stated they where a "Decedent after dinner treat." If your a peanut butter and chocolate fan this is the recipe for you.

What are buckeyes?

Buckeyes are are a candy that resembles the nut from the Ohio state tree. Buckeyes are a no bake treat that very closely resembles Resse's Peanut Butter cups. They have a peanut butter mixture in the middle and than are dipped in chocolate. Buckeyes are easy to make and don't have to look perfect to taste amazing.

Buckeyes Recipe

Prep Time 55 minutes                  Skill level  medium        

Ingredients

 
  • 1/2 cup unsalted butter

  • 1 1/2 cup peanut butter

  • 1 tablespoon vanilla extract

  • 3 cups powdered sugar

  • 1 1/2 cups chocolate chips

Directions

 

Step 1: Mix ingredient together:

In a medium bowl, cream together peanut butter and butter. Mix in vanilla extract and powdered sugar until fully combined.

Step 2: Roll dough:

On a cookie sheet with parchment paper place 1-inch balls covering the cookie sheet. Freeze the balls of dough on cookie sheet for 30 minutes

Step 3: Dip balls in chocolate:

Place chocolate chips in a microwave safe bowl. Microwave chocolate for 30-sec intervals stirring in-between until fully melted. Place toothpick in balls and dip 3/4 of ball into chocolate. Place dipped balls back on cookie sheet and take out toothpick. Fill in hole with peanut butter mixture.

Step 4: Storage:

Keep buckeyes in fridge for up to 2 weeks.
